What you need:
1 cup light brown sugar, firmly packed
3/4 cup peanut butter
1/2 cup butter, softened
1/2 teaspoon vanilla
1 egg
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 cup sugar for rolling cookies
1. Heat oven to 375 degrees.
2. Beat sugar, peanut butter, butter, vanilla, and egg on medium speed until creamy. Blend in flour and baking soda on low speed until well blended.
3. Shape dough in to 1 1/4 inch balls. Roll in sugar and then place 2 inches apart on ungreased cookie sheets. Flatten in crisscross pattern with tines of fork dipped in sugar.
4. Bake 6 to 9 minutes or until set. Cool on cookie sheet 2 minutes and then remove to wire racks to cool.
